• Project: Taste it Tuesday: Super simple and yummy slow cooker chicken tacos
Difficulty rating (1=easiest, 5= way too hard!): 1, so easy!
• Time: I did a major short cut and just used a rotisserie chicken, so basically the crock pot was just to warm everything up together and incorporate all of the goodness 😉 so really it only took me about 40 min 😉
• Would I do it again? most definitely! We love Mexican food in our house and have it at least twice per week, so this was a HIT!
• What I would do differently: see above, and I would do it that way again- why not!
Don’t you just love how much sour cream I put on mine…oh yes I did that 🙂
• Items used: super easy and delicious recipe from:   Tasty Kitchen    Head on over to her site for all of the details, you will like it!

• Project: taste it tuesday: super yummy pizza casserole; a huge hit for the kiddos! Plus a quick tip on boiling water with a wooden spoon….supposedly doesn’t boil over, not sure if this really does the trick!
Difficulty rating (1=easiest, 5= way too hard!): 2. The pizza casserole was really pretty easy, just a lot of layering, but that’s what makes it good, right?!
• Would I do it again? yes!
• What I would do differently: we did chicken sausage and ground turkey for a leaner version
• Items used: yummy recipe from: http://formamas.blogspot.com/2011/08/pizza-casserole.html

• Project: day 144: cooking it up/super yummy baked creamy chicken taquitos, a definite keeper!
• Difficulty rating (1=easiest, 5= way too hard!): 1 (really, it was a 1, even for me!)
• Would I do it again? oh yes, and I already have! I made it once for Hayden’s teacher Abby who just had a baby without the onions and cilantro, and then again for us with!
• What I would do differently: We modified them a bit for Abby’s family, but I tried one and it was still good! We like a bit more heat, so we kept it the same for us, and it was SO good!
• Items used: for this amazing recipe head to: http://www.chef-in-training.com/2012/02/baked-creamy-chicken-taquitos/

  • Project: day 144: cooking it up/ diy healthier microwave popcorn, in a paper bag!
  • Difficulty rating (1=easiest, 5= way too hard!): 1
  • Would I do it again? yes! This is a much healthier way to do popcorn versus store-bought microwave popcorn and it is super easy! We never buy store-bought any more, and usually always use our stove top to do it, which we love, but this microwave version is much faster!
  • What I would do differently: we added your typical salt, pepper, and butter, but it would be great with many other popcorn toppings!
  • Items used: paper bag, 1/2 cup of popcorn kernels, and recipe from: http://www.squawkfox.com/2010/07/27/popcorn-recipe-gourmet-popcorn/
