Project: day 125: get crafty/ a simple morning birthday surprise: balloons and streamers in the hallways to run through!

Hayden turned 7 year’s old today, amazing, my big girl!!! So I thought it would be a great way to start her day, and boy was it!
• Difficulty rating (1=easiest, 5= way too hard!): 1, really pretty simple, however not so much when you are supposed to be in bed a few hours prior to funtion the next day, but hey that’s the life of a mom sometime’s, rigth!?
• Would I do it again? the smile on Hayden’s face was priceless, so yes!
• What I would do differently: should have done it sooner…every year tradition perhaps?!

  • Difficulty rating (1=easiest, 5= way too hard!): 1
  • Would I do it again? yes, it was super easy, and we can use this message board in our house for anything! Great idea for a daily menu, cute notes for the kiddos, holidays, you name it!
  • What I would do differently: nothing!
  • Items used: frame (Hobby Lobby), Chalkboard spray paint (Hobby Lobby), chalk
  • instructions: take out the glass panel from the frame, follow directions on back of can, spray two coats, let dry 24 hours, “break-in” the now chalk board by rubbing the board with the side of the chalk, erase, and write your message, it’s that simple even I can do it 😉

Project: day 38: get crafty/ party decor/ how to make pom poms (Morgan’s 3rd birthday is coming up, so I will be doing many fun Minnie Mouse/party crafts, yea!
• Difficulty rating (1=easiest, 5= way too hard!): 3
• Would I do it again? yes! They really were just a bit time-consuming, and mine did not turn out quite as perfect as Martha Stewart‘s would, but then again, that’s why I’m doing all this, to get better! Can’t wait to see what they will look like at the Minnie Mouse Birthday party hanging from the ceiling!
• What I would do differently: Martha’s website said to use 8 sheets, which I did for my first one, but I thought it was a touch skimpy, so I did ten (looks better). The tissue paper I purchased at the store was 20×20, not 20 by 30, so hopefully that was ok 😉
• Items used: Packets of tissue paper to go with our hot pink, black, white, and polka dot Minnie Mouse theme (Hobby Lobby), white floral wire (18″) (Hobby Lobby), scissors

  • Tissue Paper Pom-Poms How-To

    These dahlialike pom-poms appear to float in the air; in reality, they are hung from the ceiling with monofilament, imparting a cheerful radiance to any party.

    You can also buy a Tissue Paper Pom-Pom Kit from Martha Stewart Crafts.

  • Step 1

    Stack eight 20-by-30-inch sheets of tissue. Make 1 1/2-inch-wide accordion folds, creasing with each fold.

  • Step 2

    Fold an 18-inch piece of floral wire in half, and slip over center of folded tissue; twist. With scissors, trim ends of tissue into rounded or pointy shapes.

  • Step 3

    Separate layers, pulling away from center one at a time.

  • Step 4

    Bend wire into a loop to fit around napkin, and twist end around loop to secure.

Project: day 37: fashionable momma/ winter casual date night outfit, turned into popcorn night in(cooking it up)! After a day at work, going out just sounded like to much work! A night in sometimes is the best thing to do, this fashionable momma, was a tired momma!

• Difficulty rating (1=easiest, 5= way too hard!): 1
• Would I do it again?outfit: yes, it was cute, comfy and casual; plus I really love that color green! popcorn: no, I thought it was a weird combination of lemon an parmesan, didn’t quite work for us!
• What I would do differently: outfit: well, if I had those awesome Tory Burch boots, I would definitely be wearing those! popcorn: leave out the lemon and parmesan, and make Kettle Korn, my favorite! 😉
• Items used: outfit: Brass Plum green cardigan (Nordstrom’s), black James Jeans (Nordstrom’s), Ugg brown leather boots (Nordstrom’s), white ceramic Michael Kors watch (Nordstrom’s), Gorjana gold hoop earrings, Gap leopard print scarf (I just love scarfs in the winter!).   • What I would do differently: get more at the store so I can get the rest of the furniture done at once!

day 35: cooking it up/ winter Thai chicken-coconut soup

Project: day 35: cooking it up/ winter Thai chicken-coconut soup
• Difficulty rating (1=easiest, 5= way too hard!): 2
• Would I do it again? yes, however we changed the recipe a touch (in red below), and would even change it up a bit more next time (see below).
• What I would do differently: The soup was very good (probably 3 stars out of 4), but we changed up the original (the girls had the original recipe, but we spiced it up a bit for ourselves!). Next time we would add two cans of coconut milk, mushrooms, and two limes)

Total time: 30 minutes

INGREDIENTS:

  •  2 tbsp extra-virgin olive oil
  • 1 clove garlic, minced
  • 1 medium onion, chopped
  • 1 cup carrots, scrubbed and chopped into approximately 1/2-inch pieces
  • 1 cup small white or red potatoes, scrubbed and chopped into approximately 1/2-inch pieces
  • Sea salt and ground black pepper, to taste
  • 1 1/2 cups low-sodium chicken broth
  • 1/2 cup light coconut milk (we did a cup, we love the coconut taste!)
  • 1/2 cup skim milk (we did a cup)
  • 2 boneless, skinless chicken breasts (4 oz each)
  • 1/2 cup snow peas, cleaned and cut lengthwise (we used sugar snap peas since that was what we had on hand!)
  • 1 tsp red chile pepper flakes (or to taste)
  • 1 to 2 tsp fresh lemon juice (we used lime since we like the flavor better)
  • 4 tbsp cilantro, coarsely chopped
  • Four ourselves and not the kiddos, we added Sriracha Thai hot sauce and fish sauce for a bit more flavor)

INSTRUCTIONS:

  1. Heat oil in a pot over medium. Add garlic, onion, carrots and potatoes. Season with salt and pepper and sauté until onions are lightly translucent.
  2. Add broth and coconut and skim milks. Bring to a light boil.
  3. Add chicken, cover and let simmer for 12 minutes over medium-low to medium heat.
  4. Remove chicken and set aside. Add peas and chile flakes to soup. Simmer for 2 to 3 minutes.
  5. When cool enough to handle, slice chicken and add pieces back to the soup.
  6. Season with additional salt and pepper, if desired. Add lemon juice, sprinkle in cilantro and serve.
