• Project: Taste it Tuesday: Super simple and yummy slow cooker chicken tacos
Difficulty rating (1=easiest, 5= way too hard!): 1, so easy!
• Time: I did a major short cut and just used a rotisserie chicken, so basically the crock pot was just to warm everything up together and incorporate all of the goodness 😉 so really it only took me about 40 min 😉
• Would I do it again? most definitely! We love Mexican food in our house and have it at least twice per week, so this was a HIT!
• What I would do differently: see above, and I would do it that way again- why not!
Don’t you just love how much sour cream I put on mine…oh yes I did that 🙂

• Project: Taste it Tuesday: Jalapeno Cream Cheese Crescent Poppers, perfect for The Fourth!
• Difficulty rating (1=easiest, 5= way too hard!): 2, such a super simple appetizer to bring to any party
• Time: about 30 minutes
• Would I do it again? yes, these were SO yummy!
• What I would do differently: We love spice in my house and we added a few more of the jalapeno to our mix, but for others you might want to take out a few!

Project: day 93: baking away/ Black Magic Cake, amazingly moist chocolate cake, so good!
• Difficulty rating (1=easiest, 5= way too hard!): 3 (thank goodness my most amazing husband was able to help me frost the cake, because mine would have looked horrible!)
• Would I do it again? oh yes. This was the perfect home-made chocolate cake!
• What I would do differently: double the frosting recipe. We definitely needed more for the top!

Ingredients

1 3/4 c all purpose flour
2 c sugar
3/4 c cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 eggs
1 c strong black coffee, cooled
1 c buttermilk
1/2 c vegetable oil
1 tsp real vanilla extract
CHOCOLATE FROSTING
1/2 c margarine, softened
2 oz melted unsweetened chocolate, cooled
3 c powdered sugar
3 Tbsp milk
2 tsp real vanilla extract
 Directions
1 Combine flour, sugar, cocoa, baking soda, baking powder, and salt in a large mixing bowl or stand mixer.
2 Add eggs, coffee, buttermilk, oil, and vanilla.
3 Beat at medium speed for two minutes. Batter will be thin.
4 Pour batter into a greased and floured 9×13 pan or two 9 inch cake pans.
5 Bake at 350 degrees for 35-40 minutes for a 9×13, or 30-35 minutes for layer pans.
6 Combine frosting ingredients and mix with a hand or stand mixer. Spread frosting on cooled cakes.

• Would I do it again? oh yea! I love breakfast burritos, and this was extra good!!!
• What I would do differently: nothing at all, add salsa and eat it up!

• Would I do it again? yes! It’s such a simple, easy spring outfit, I love it!
• What I would do differently: change out the denim jacket for a cardigan, change out the sandals for flip flops or wedges… so many choices!
• Items used: Hudson white denim skinny jeans, Tory Burch nude sandals, Splendid tank-top, Juicy Couture Jean/Denim jacket, mixed bangles, leaf earring from Forever 21

Difficulty rating (1=easiest, 5= way too hard!): 1 (and I didn’t mess it up… I think!)
• Would I do it again? oh yes! They were actually too good! I will definitely have to pass these off so I don’t eat them all.
• What I would do differently: nothing at all! We halved the recipe since we we’re making them just for fun, but they are definitely party worthy. Amazing!

Ingredients

  • 1 (16 ounce) package OREO Chocolate Sandwich Cookies, divided
  • 1 (8 ounce) package PHILADELPHIA Cream Cheese, softened
  • 2 (8 ounce) packages BAKER’S Semi-Sweet Baking Chocolate, melted

Directions

  1. Crush 9 of the cookies to fine crumbs in food processor; reserve for later use. (Cookies can also be finely crushed in a resealable plastic bag using a rolling pin.) Crush remaining 36 cookies to fine crumbs; place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into 42 balls, about 1-inch in diameter.
  2. Dip balls in chocolate; place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.) Sprinkle with reserved cookie crumbs.
  3. Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.

Project: day 80: crafty kiddos/ diy cloud dough (moon dough) with printable mason jar label/ easy and fun!
Difficulty rating (1=easiest, 5= way too hard!): 1
• Would I do it again? yes, I wish I had tried this earlier, it was SO easy (plus the baby oil smells so good).
• What I would do differently: nothing, except make more! The girls had so much fun doing this today 🙂
• Items used: mason jar, scrapbook paper, sticker labels, flour (4 cups), baby-oil ( 1/2 cup)
