    • Difficulty rating (1=easiest, 5= way too hard!): 3. Thanks to my sister-in-law Molly, it went pretty smoothly, but it really helps to have an extra hand, these guys are a bit time consuming!
    • Would I do it again? we will see tomorrow, but I think the kiddos will like them!
    • Items used: cupcakes, frosting, coconut, oreo crumbs, chocolate chips, mini chocolate chips, marshmallows

Project: day 83: baking away/ last minnie mouse party recipe: minnie cake-pops!
• Difficulty rating (1=easiest, 5= way too hard!): 3
• Would I do it again? yes, I love cake-pops! They take a bit of time, and a few causalities, but I will definitely be trying more of these cute things in the future!
• What I would do differently: nothing except do them for again for different seasons/holidays!

cake-pop holder: styrofoam spray painted black, minnie mouse ribbon hot glued around the edges, so simple! 🙂

day 81: baking away/ super easy and delicious chocolate dipped Oreo truffles

Difficulty rating (1=easiest, 5= way too hard!): 1 (and I didn’t mess it up… I think!)
• Would I do it again? oh yes! They were actually too good! I will definitely have to pass these off so I don’t eat them all.
• What I would do differently: nothing at all! We halved the recipe since we we’re making them just for fun, but they are definitely party worthy. Amazing!

Ingredients

  • 1 (16 ounce) package OREO Chocolate Sandwich Cookies, divided
  • 1 (8 ounce) package PHILADELPHIA Cream Cheese, softened
  • 2 (8 ounce) packages BAKER’S Semi-Sweet Baking Chocolate, melted

Directions

  1. Crush 9 of the cookies to fine crumbs in food processor; reserve for later use. (Cookies can also be finely crushed in a resealable plastic bag using a rolling pin.) Crush remaining 36 cookies to fine crumbs; place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into 42 balls, about 1-inch in diameter.
  2. Dip balls in chocolate; place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.) Sprinkle with reserved cookie crumbs.
  3. Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.

  • What I would do differently:  nothing!
  • Items used: polka-dot cupcake liners, strawberry cake mix by Pillsbury, Pillsbury cream cheese frosting, regular Oreos, mini oreos

day 62: baking away/ chocolate-dipped minnie mouse Oreo pops!

Ingredients (my changes in red):
Wilton Candy Melts (Midnight Black) or chocolate (since it was not Halloween time, but Valentine’s season, we could only find chocolate, even after 5 stores, oh well, they still tasted great!)
Double Stuff Oreos (I need to buy some stock in that company)
Bite Size Oreos
Popsicle Sticks
red ribbon (we used black and pink ribbon with polka dots and zebra stripes of course!)

Directions:

Slide the popsicle sticks into your Double Stuff Oreos very gently by holding the cookie in one hand and sliding the stick with the other. Then take one bite size Oreo cookie and separate it into two halves. Scrape out the frosting with the edge of a knife. Slide the smaller cookies into the top of the Oreo to make her ears. Lay them out onto some wax paper.

Melt your candy melts in the microwave in 20 second intervals until it is melted to a smooth and creamy consistency. Now “dip” the Oreos into the candy. Now I don’t actually dip them but rather take a spoon and smooth it onto the front of the Oreos. You need to be very careful when doing this as the ears can come off very easily. Just do the front and then set it onto the wax paper. Do this for all of your Oreos and then pop them into the freezer. After 20 minutes you can take them out and then cover the back side of the Oreos with the candy. Make sure to cover the ears and the bottom of the stick well so that they do not fall apart. Once they have been popped in the freezer again, they will be really sturdy and you should not have a problem with them falling apart…even if you accidently drop the tray onto the countertop! Not that I may have done that…just saying!

Then take some ribbon and tie it into a bow around the base of the Minnie Mouse head to add a pop of color and detail. Serve them to your party guests or send them home with this fun and tasty party favor! Who wouldn’t love a Minnie Mouse Oreo Pop?
